5 Minute Burrito Stuffed Sweet Potato
This recipe comes together in 5 minutes if you are prepared! Get yourself a rotisserie chicken to save some time. Have fun with this recipe. You can top it with whatever you want! Always use Greek yogurt to keep fat down. Some reduced fat shredded Mexican cheese would be lovely too. Enjoy!
Ingredients
- 1 Sweet Potato
- 1/2 cup Shredded Chicken
- 2 tbs Black Beans
- 2 tbs Guacamole
- 2 tbs Salsa
- 2 tbs Greek Yogurt
- 1/2 tsp Chili Powder optional if you want some spice
Instructions
Sweet Potato
- Cook your sweet potato using your preferred method. You can either bake it in the oven(more caramelization) or cook it in the microwave(very soft).
- Microwave: Wash and dry your potato. Pierce it around with a fork. Microwave for 3 minutes. Flip over and microwave another 2 minutes.
- Oven: Preheat oven to 425. Wash and dry potato, Pierce it around with a fork. You can place the potato in the oven without anything under it. Bake for 45 minutes.
Burritos
- Cut open your sweet potato. Add your shredded chicken first. Then top with beans, guacamole and salsa.
- If you want a little kick, combine chili powder with greek yogurt. Top potato with yogurt.
