Breakfast Chilaquiles
If you dont know what chilaquiles are, they are a traditional Mexican dish which basically consists offried corn tortilla chips simmered in a red salsa like sauce. They are often served at breakfast. According to my Mexican sources, the authentic way to serve them is indeed the soggy baked waywhich is what I have created here. Though some places will make it more about the crunchy chips and less about the other ingredients and that's a little more Americanized but it's also ok! Either way, theres no wrong answer as long as its bursting with flavor
Ingredients
- .5 White onion, roughly chopped
- 2 Large Tomatoes, roughly chopped
- 1 Jalapeno, deseeded
- 2 Garlic Cloves, Minced
- 1/4 cup Chicken Broth
- 1 bag Tortilla Chips do not get thin restaurant style. The thicker you can find the better.
- 6 eggs optional
- 1/4 cup Queso Fresco garnish
- Cilantro garnish
- Enchilada Sauce optional
Instructions
- Preheat oven to 400 degrees
- Place the onion, tomato, jalapeno, garlic and chicken broth. Blend until smooth.
- Using a large skillet over medium heat, heat up 1 tbs of olive oil. Add your sauce and let it cook until it gets a little thick. Atleast 5 minutes.
- Add the entire bag of tortilla chips to the skillet and toss well for about 2 minutes.
- Add chips and all sauce into a baking dish. Make 6 wells in between the chips. Crack 1 egg into each well.
- Bake to your liking- about 10 minutes for yolks that are just set.
- Top with crumbled queso fresco, cilantro and a drizzle of enchilada sauce.
