10 Minute Hot & Sour Dumpling Soup
This soup is perfect for rainy days or if you're feeling under the weather! The sourness and heat helped clear my congestion a bit and it was so delicious. This dish comes together in 20 minutes!I am not a fan of frozen food but the reality is we don't have time to handmake everything these days. Always look out for ingredients and try to choose minimally processed options. One of my favorite frozen dumpling brands is called Laoban and you can find them in the freezer section at Whole Foods
Ingredients
- 8 oz Shiitake Mushrooms
- 1/4 cup Rice Vinegar
- 1/4 cup Soy Sauce
- 2 tsp Ground Ginger
- 1 tsp Sesame Oil
- 8 cups Chicken Broth
- 1 tsp chicken bouillon
- Chili Oil
- 4 Green Onions, thinly sliced
- Dumplings of your choice I used the Trader Joes Chicken Cilantro
Instructions
- In a large stock pot, add your chicken broth and bouillon. Mix well. Turn heat up to bring to a boil.
- While the broth is heating up, get your mushrooms and remove the stems. Slice the caps very thin
- Using fresh ginger, peel and mince about 1" piece finely.
- Add rice vinegar, soy sauce, ginger and sesame oil to the broth. Mix well.
- Once broth is boiling, add your dumplings and boil as per package instructions (likely 7-10 minutes)
- Garnish with sliced green onion and chili oil
