Charred Corn and Avocado Dip

This dip is a fun alternative for all my guacamole lovers! It’s chunky and has little bursts of texture thanks to the corn kernels and crunchy roma tomatoes. Perfect for summer!

Charred Corn and Avocado Dip

Nothing says summer like recipes with delicious corn! This salsa is a fun alternative to guacamole so if you love guac you will absolutely love this! It's easy to make, refreshing and healthy! You can scoop with tortilla chips or go on the lighter side and use sliced radishes and celery.
Like guacamole, make sure you purchase your avocados a couple days in advance. I always make the same mistake of buying this the day of and then going crazy trying to find a soft avocado!

Ingredients
  

  • 2 Haas Avocados, Diced
  • 2 Roma Tomatoes, Diced cored and deseeded
  • 1/4 cup Trader Joes Frozen Charred Corn, defrosted if you don't have Trader Joes, you can use regular sweet corn canned but the extra charred flavor is worth it!
  • 1 Lime, juiced
  • 1 Jalapeno, Minced Cored and deseeded
  • 1/2 Red Onion, Diced
  • 1/4 cup Fresh Cilantro, chopped
  • 2 tbsp Extra Virgin Olive Oil
  • Salt to taste

Instructions
 

  • In a large bowl, add tomatoes, avocado, jalapeno, corn and onion. Add lime juice, salt, olive oil and chopped cilantro.
  • Combine well. Serve and enjoy!
