Baked Turkey Sausage and Feta Egg Boats

Egg boats. My (new) one true breakfast love. These are so fun, delicious and versatile. You can literally fill them with whatever you have lying around. My favorite part about this is that you literally cut them into slices for serving and people can just grab them and eat away. They dont even need a plate! They are easy to make, easy to eat and easy to clean! Now THAT is what I'm talking about people!

Ingredients
  

  • 2 Demi Baguettes about 12" long. you can find them in the bakery section. do not buy one long baguette and cut in half.
  • 6 Eggs
  • 1/3 cup Low Fat Milk
  • 4 Turkey Sausage Links, Crumbled
  • 1 cup Baby Spinach, Roughly Chopped
  • 1/2 cup Crumbled Feta
  • Salt and Pepper to taste

Instructions
 

  • Preheat oven to 350 degrees
  • Place baguettes onto a baking sheet. Carefully cut through the tops of each baguette until about a ½ inch to the bottom and remove cut top. BE CAREFUL to not puncture the crust ! Once you have made the top hole, using your hands, peel away the inside of the bread walls and bottom as much as possible.
  • In a mixing bowl, add your eggs and whisk well. Add sausage, feta, spinach, salt and pepper. Combine well.
  • Fill each of your baguettes with half of the egg mixture. Make sure to spoon out some of the chunkier ingredients to make it even.
  • Transfer to oven and bake for 30 to 35 minutes.
  • Serve immediately.
