Bruschetta Avocado Toast
Bruschetta, if you don’t already know, is a classic Italian antipasto made from tomatoes.Cherry tomatoes are one of those ingredients that you can usually always find in my fridge. Tomatoes in general give me heartburn but who can live without those delicious tangy guys? Not me. This recipe combines two of the best things: cados and tomatoes. Yes.Due to the tomato aspect, you can really serve this at any time of day. Plop this on top of some crostinis and you’ve got yourself a delicious hors d'oeuvre! Add a dollop to your lunch bowl! Or if you’re like me, spread it on top of some crunchy toast in the morning with a poached egg. Yes.
Ingredients
- 2 Hass Avocados
- 1/2 Cup Cherry Tomatoes, Sliced
- 1 Clove of Garlic, Minced
- 1/2 tsp Salt
- 3 Basil Leaves, Chopped Up
- Juice from Half Lime
- 1/2 tsp EV Olive Oil
- 2 TBS Balsamic Reduction or Glaze
Instructions
- In one bowl, mix the halved tomatoes with olive oil, balsamic reduction and garlic
- In another bowl, mash the avocados to your desired consistency. Add in salt, pepper, lime and basil.
- Spread baguette with mashed avocado and top with tomato mixture. Garnish with basil and drizzle balsamic reduction.
