Chewy Frosted Sugar Cookie Bars

These delicious soft sugar cookie bars are the perfect combo between a cake and a cookie. The texture is the perfect mix between soft and chewy!

Sugar Cookie Bars

Am I the only person who randomly craves vanilla cake? But a slice of vanilla cake isn't really a snack or easily accessible so then I decide what I really wanted was some sort of combo between a sugar cookie and vanilla cake where it's easy to hold and won't fall apart but tastes just like cake. Well... if you are special like me and crave this unique item..look no further!
Sugar cookie bars are the ultimate combo between cake and cookie. They are dense, chewy and covered in frosting. This recipe definitely makes alot of frosting but I just wanted to accomodate my frosting freaks out there. Feel free to put as much or as little frosting as you wish. Judge free zone.
A note on frosting making: Add add much or as little heavy cream as you desire when it comes to your preferred consistency. Have fun with it!

Ingredients
  

  • 2 Eggs Plus 1 Yolk
  • 1 stick of unsalted butter softened
  • 2 cups Sugar
  • 1.5 cups Flour
  • 1 tsp Baking Powder
  • .5 tsp Baking Soda
  • 2 tsp Vanilla
  • .5 tsp Salt

Frosting

  • 4 cups Powdered Sugar
  • 2 Sticks of unsalted butter
  • 1 tsp Vanilla
  • 2-3 tbsp Heavy Cream add as you wish! Taste test as you go until you have reached your desired taste and consistency.
  • Sprinkles make sure they are adorbs

Instructions
 

  • Preheat oven to 350 degrees F
  • In a large mixing bowl, add your softened butter. Cream your butter for about 1 minute.
  • Add your sugar to your butter and combine. Slowly add in your eggs one by one. Add in your vanilla.
  • In a separate bowl, combine your Flour, baking powder, baking soda and salt. Mix well.
  • Add in your dry ingredients slowly into your wet. Don't mix too long. One minute or so.
  • Spray an 8x8 (9x9, 9x13 will work too) with non stick spray. Add your batter. Bake for 20-25 minutes, using the toothpick method to test doneness.
  • While your bars are baking, make your frosting. Add your butter to the mixing bowl and cream. Add in your powdered sugar one cup at a time along with your vanilla and salt.
  • Have fun with your frosting! Add cream little by little until your desired doneness. You want it to be a little stiff and not runny.
  • Obviously, finish with sprinkles.
