Chicken Pesto Meatballs

Why is pesto one of the most delicious flavors on earth? These meatballs are a flavor PUNCH! We keep them nice and healthy by using some ground chicken. You want to avoid using ground chicken breast as this will result in dry meatballs. Instead, opt for the ground chicken that has a little bit of fat (its usually about 9g per 4 oz). You're going to LOVE these!

Ingredients
  

  • 16 oz Ground Chicken not breast!
  • 1/4 cup Pesto
  • 1 Egg, Whisked
  • 3 Garlic Cloves, Minced
  • 2 tbs Grated Parmesan Cheese plus some extra for garnish
  • 1/2 cup Breadcrumbs Italian or Panko are fine

Instructions
 

  • Preheat oven to 400 degrees
  • In a large mixing bowl, combine all of your ingredients. Make sure to blend well preferably by using your hands.
  • Get ready to roll! Roll the mixture into your desired size meatballs. I like medium size which resulted in about 14 meatballs.
  • Heat up 1 tbsp of oil on a pan over medium heat. Add your meatballs and "sear" the sides until they get a golden crown crust. You don't want them to spend too much time on the pan as these will finish off in the oven. It shouldn't be more than 3 minutes per side.
  • Transfer your meatballs to a baking sheet and bake for 10 minutes.
