Chopped Rotisserie Chicken Salad With Peanut Dressing

This salad is basically the salad of your dreams. It is literally the most delicious thing. I will warn you it takes about 45 minutes to make if you have not made the sauce but WOW it is worth it. Every element comes together so incredibly. I am warning you: you will be so addicted to this salad. If you're thinking of what to bring to the next party, bring this salad. Everyone will ask you for the recipe.

Ingredients
  

  • 1 Rotisserie Chicken
  • 3 Cups Kale do not get baby kale; get regular
  • 3 Cups Brussel Sprouts
  • 1 cup diced mango
  • 1 cup My Low Sugar Peanut Dressing
  • 1/3 cup Crushed Peanuts for garnish

Instructions
 

  • Shred the chicken from your rotisserie chicken. You want them to be long strips so not super thin. Set aside in a large mixing bowl.
  • Using a food processor, add the kale until it finely shreds. This shouldn't take long. Just a few seconds. Add to your mixing bowl.
  • Repeat the same step with your brussels sprouts. You want to chop them up a little and then add them to the food processor. Add to your mixing bowl.
  • Add your chopped mango the mixing bowl.
  • Add your peanut dressing and mix your salad until well combined. Top with crushed peanuts for some extra crunch.
