Cuban Pollo a La Plancha

Cuban Pollo a La Plancha
This chicken is a classic in Cuban cuisine. It's healthy and bursting with flavor. It basically translates to chicken on the griddle (the word plancha technically means iron but in this case they mean griddle). You can use a griddle, skillet or grill though. This is a quick marinade-only 30 minutes! It's a citrusy garlic finish and is traditionally topped with a bunch of sauteed onions.We are going to make a classic mojo marinade for this. Mojo is made with the juice of sour oranges. I've come to learn those aren't easily found unless you have a Latin supermarket or live in Miami. So to make things easier, my mojo recipe here will use a regular orange and I am adding plenty of lime to make it sour. If you prefer to use a classic sour orange, simply omit the lime juice from the mojo.
Ingredients
- 1 lb Chicken Breast
- 1 White Onion optional- to top with
Mojo Sauce
- 1/4 cup Olive Oil
- 2 Limes, juiced
- 4 Garlic Cloves, Minced
- 1 tsp Cumin
- 1 tsp Oregano
- 1 tsp Salt
- 1 tsp Pepper
- 1 Orange, juiced
- 1 tsp Onion Powder
- 1 tsp Badia Sazon Complete
Instructions
- Lets start by making the mojo. Add all of the ingredients to a food processor and blend.
- Cut the chicken breast in half, and lay on a cutting board one by one. Place saran wrap if you have some over the breast(it's ok if you dont), one by one, and pound it with a kitchen hammer or a pan, to make it about a quarter inch thick.
- Place your chicken in a bowl or dish and pour all of the marinade on it. Toss well and let it sit for 30 minutes
- To grill the chicken, heat some oil over medium-high heat. Once the oil is hot, place the chicken breast in. Cook each side for about three to four minutes, until the chicken is slightly browned on each side. It should be a nice golden brown crust.
- If you want to top it with onions, slice your white onion thin strips and add it the same pan you used for the chicken. Saute for about 5 minutes.
- Squeeze some lime over the chicken, serve and enjoy. Traditionally served with white rice, beans and avocado
