Easy & Healthy Chicken Cacciatore
This recipe results in a vegetable loaded pasta sauce with chicken breast. It’s easy, tasty and light!
Slow Cooker Chicken Cacciatore
Cacciatore means "hunter" in Italian which in the world of cooking is actually referring to a method of preparation involving vegetables, herbs and most importantly the meat. Cacciatore is actually really easy to make. This recipe is one of those "dump and cook" so it doesn't really require much prep which is my personal favorite thing to hear on busy days. This recipe will come out with a lot of liquid. You didn't do anything wrong. It's supposed to be ladled and served on top of pasta so be sure to do that!
Ingredients
- 1.5-2 lbs Chicken Breast
- 1 Red Bell Pepper, Sliced into strips
- .5 Yellow Onion, Diced
- 3 Garlic Cloves, Minced
- 28 oz Diced Tomatoes Do not drain
- 8 oz White Mushrooms, Sliced
- 2 tsp Italian Dressing
- 1 tsp Salt
- 2 tsp Tomato Paste
- Basil, To Taste
Instructions
- Add your bell pepper, onion, diced tomatoes, mushrooms, and garlic to your slow cooker.
- Place your chicken breasts on top of the vegetables.
- Add in your italian seasoning, salt and tomato paste. Using tongs, mix everything until well combined.
- Cook on high for 3 hours.
- Serve over your favorite pasta. Garnish with fresh basil.
