Easy Nutella Cookie Cups

Cookie cups are such a fun treat to make! Using pre made cookie dough, these come together in 15 minutes. Stuff with my Nutella ganache or simply just frosting!

Nutella Cookie Cups

These cookie cups are fun and easy to make! The beauty of this recipe is you can really fill these cups with anything. If you're looking to make these with the kiddos and don't want to have a hot stove around, you can literally just put regular nutella or even frosting and they will be just as delicious!
To make mini cookie cups, you need a mini muffin/cupcake baking pan.
My recipe makes a nutella filling by combining cream, nutella and a thickening agent(cornstarch) to give it a dense texture. Corn starch has twice the thickening power of flour so a little goes a long way. While it's a powerful tool to use in baking, it can easily ruin your entire recipe if you don't properly use it. Trust me this has happened to me countless times. Be sure to follow the steps below so you don't ruin your nutella !

Ingredients
  

  • 1 Package of cookie dough Easiest if you buy pre cut

Nutella Filling

  • 2 cups Heavy Cream
  • 1 cup Nutella
  • 2 tbs Corn starch

Instructions
 

  • Pre heat your oven to 350. Spray your pan with non stick butter spray.
  • Break off each pre cut section of cookie dough and roll it into a ball. Place into each individual section in your pan. Bake for 15 minutes.
  • As soon as they come out of the oven, using a small item like a teaspoon make an indent in each cup.
  • Let them cool prior to removing from pan.
  • Here is where you have the option to either fill them with regular nutella or frosting. If you wish to make nutella ganache filling then continue on!
  • To make the filling, mix 2 tbs of corn starch with 1/2 cup of cream and mix well. Add this mixture, the rest of the heavy cream and the nutella to a saucepan. Set it on medium heat. This step is SO sensitive because if you mess up you may find a bunch of lumps in your nutella mixture and ultimately ruin it.
  • As it is over medium heat, be sure to constantly stir it with a whisk. Let it boil for about 2 minutes and them remove from the heat. The corn starch needs the heat to active so if you see your filling is super runny and not getting thick it needs more heat. However, corn starch can ruin things if its heated too high. So be careful!
  • Once it has reached the thickened consistency, slowly spoon into each little cup and enjoy!
