Quick Pesto Cous Cous
Warning: This recipe is dangerous. You will find yourself standing over the stove eating away at this. You won't be able to stop. You won't want to share it. This cous cous comes together beautifully with pesto, dried cranberries, feta and pine nuts. That's it. No chopping needed, nothing fancy. Just throw it all in there and prepare to devour. This is a perfect side dish for a roasted chicken or grilled steak.
Ingredients
- 1 cup Chicken Broth
- 1 cup Cous Cous
- 1/4 cup Pine Nuts
- 1/3 cup Feta Cheese, crumbled or cut into small chunks
- 1/3 cup Reduced Sugar Dried Cranberries (Craisins)
- 3 tbs Pesto
Instructions
- Add your chicken broth to a medium saucepan and bring to a boil.
- Once its boiling, stir in your cous cous, cover with a lid and remove from the heat.
- Let the cous cous sit for 5 minutes. Once its done, use a fork to fluff it up.
- Add in feta, pesto, craisins and pine nuts. Stir well.
