Greek Style Ground Chicken
I love any sort of ground meat for lunch prep because it cooks so quickly and it always tastes good. But it can get old really quick! This is perfect when you want to try something a little different but super healthy... I'm talking low fat, low carb, high protein. It comes together in about 20 minutes so it's really easy to make.
Ingredients
Seasoning
- 1 tsp Oregano
- 1 tsp Paprika
- 1 tsp Salt
- 1/2 tsp Garlic
- 1/2 tsp Onion Powder
- 1/2 tsp Cumin
Main Ingredients
- 1 lb Ground Chicken not breast; use the one with 10g of fat
- 1 red onion, diced
- 1 orange bell pepper, diced
- 1 cup cherry tomatoes, sliced in half
- 1 tbsp Fresh Mint
- 1 tbsp Fresh Basil
- 1/4 cup Crumbled Feta
- 2 tbsp Sliced Almonds
- Pita Chips- Optional Recommended to scoop up with
Instructions
- In a small bowl, mix together your spices.
- On a skillet over medium heat, heat up 2 tbs of olive oil. Add your ground chicken and 2-3 teaspoons of your spice mixture(you can start with 2 if you like and when its cooked you can try it and add more if needed). Cook until mostly cooked through about 7 minutes. Set aside.
- Add your chopped pepper and onion to the skillet. Saute for about 7-8 minutes.
- Add your chicken back to the skillet along with your cherry tomatoes. Mix well. Let it cook for about 8-10 minutes until the tomatoes get wrinkly.
- Garnish with feta, mint, basil and sliced almonds.
