Harvest Salad

Looking for a salad for Thanksgiving? Look no further my friends! This salad is THE perfect recipe for the holidays! It's SURE to impress. The dressing is absolutely to die for and all the chunky ingredients come together beautifully.
As with many of my recipes, feel free to get creative and add in your own favorite ingredients. Pomegranate seeds would be a lovely addition. Avocado as well! Turn this into a full meal and serve it with my delicious tangy maple mustard chicken.

Ingredients
  

  • 5 oz Baby Kale
  • 1 Red Apple, Diced I like Gala
  • 1 cup Butternut Squash, Cubed and Cooked
  • 2 oz Goat Cheese Crumbles
  • 1/4 cup Candied Walnuts, Chopped

Apple Cider Vinaigrette

  • 1/4 cup Apple Cider Vinegar
  • 1/3 cup Olive Oil
  • 1 tbs Grainy Mustard
  • 1 Garlic Clove, Minced
  • 1 tbs Honey
  • Salt and pepper to taste

Instructions
 

  • In a small mixing bowl, let's make the dressing. Add your vinegar, oil, mustard, honey and garlic. Whisk together until well combined. Set aside.
  • In a large salad bowl, add in your kale, apple, butternut squash and walnuts. Do NOT add the goat cheese yet.
  • Add in your dressing and toss until well combined.
  • Sprinkle your goat cheese evenly over the salad. Do not toss. Serve it with the crumbles on top.
