Healthy Greek Chicken Meatloaf With Feta & Crushed Tomatoes
This protein packed Greek-inspired chicken meatloaf is a delicious twist on a comfort food classic. Made with lean ground chicken, it's packed with nutrient-rich spinach for a healthy boost, crumbled feta cheese for a creamy, salty bite, and crushed tomatoes for a hint of natural sweetness and moisture. Fragrant herbs and garlic tie it all together, giving each slice a burst of Mediterranean flavor.
Ingredients
- 2 lbs Ground Chicken do not get breast. Look for 90% or 92%
- .5 cup Crumbled Feta Cheese
- 1 cup Frozen Spinach, thawed and drained
- .5 Lemon, juiced
- 1 tsp Oregano
- 2 Garlic, minced
- 1 tsp Salt
- .5 tsp Pepper
- 1 Small Red Onion, finely chopped
- .3 cup Panko Breadcrumbs
- 1 Egg, beaten
- 1 tbsp Worcestershire Sauce
Sauce
- 1 tbsp Ketchup
- 14 oz Diced Tomatoes
Instructions
- Preheat oven to 350F degrees
- In a large mixing bowl, combine all the ingredients together until well blended.
- Place mixture into a loaf pan and bake for 60 minutes or until internal temp reached 165 f degrees.
- While your loaf is cooking, lets make the sauce. Using a small saucepan, add ketchup and diced tomatoes. I like to add a small slice of butter for some richness! Heat on low and stir together.
- Once loaf is done cooking, let it sit for 5 minutes before slicing. Serve with sauce on top and enjoy
