Lite Elote Dip (Corn Dip)
Oh my gosh. This dip is so addicting. You need to make this for your next gathering. It’s quick and easy but oh so incredible!
Lite Elote (Corn) Dip
This trending dip is usually made with sour cream, cream cheese, mayo, etc. It's so unhealthy and while I am sure delicious, it's not gut friendly. I love the smell of roasted corn and knew I wanted to try and make a better version of this somehow. The only semi annoying thing here is I really recommend you get the frozen roasted corn from Trader Joes. It makes a HUGE difference in flavor and it's really what we are looking for especially since we are trying to keep all the ingredients as lite as possible we need that corn to shine through honey. Serve this with tortilla chips and get ready to be answering "what is the recipe?". Of which you will kindly say "The Relatable Chef babe". IT'S SO GOOD.
Ingredients
- 2 Cups Trader Joes Roasted Corn(Frozen aisle) completely defrost it
- 1 Cup Greek Yogurt
- 1 tsp Paprika
- 2 tsp Chili Powder
- 2 Garlic Cloves, Minced
- 1/4 cup Low Fat Cream Cheese
- 1 tbs Lime Juice aka half a lime
- 1/2 Red Onion, Diced
- 3 tbs Fresh Cilantro, chopped
- 1/2 cup Low Fat Shredded Mexican Cheese
Instructions
- Add your garlic to a non stick sauce pan and sauté for 2 minutes on medium heat.
- Add your chopped onion and cook until it becomes glossy, about 5 minutes
- Add in your corn and cook for 10 minutes.
- Remove from heat and let the corn cool down COMPLETELY! No cheating 🙂
- Stir in Greek yogurt, cream cheese, paprika, chili powder, lime juice and cilantro. Stir until well combined.
- Add to a microwave safe dish and sprinkle your cheese on top. Make sure it coats all the dip. Microwave until cheese is fully melted and bubbling a little.
