Mango Chimichurri Sauce
This summer twist on a delicious Latin sauce is the perfect addition to all your summer bbqs! Using a food processor, it takes just a few minutes to come together. With it's strong flavor, there is no need to do much to your meat other than salt and pepper so this makes for some really easy cooking. I love it on grilled chicken but it goes well on so many things! Try fish, shrimp, chicken wings, steaks! Note that this is not recommended to use as a marinade. Chimichurri is a sauce so you would cook your meat first and then top it with this.
Ingredients
- 1/4 cup Olive Oil
- 3 Garlic cloves
- .5 tsp Salt
- .5 cup Fresh Parsley
- 1-2 tbsp Red Wine Vinegar start with 1 and then adjust if you want a second
- .5 tsp Dried Oregano
- 1-2 Small Red Chilies, deseeded
- 1/4 cup Diced Mango make sure its sweet and not green
Instructions
- Add all your ingredients to a food processor and give it a few pulses. You don't want it to get so grinded--it should be like a rough chop. if you dont have a food processor--don't worry! This sauce is actually one of the few that is even better without one. Just chop up all your ingredients and mix together. You'll want the parsley and red chilies to be really finely chopped.
