Pumpkin Pancakes
Here's an easy way to make something a little different with that pancake mix that's sitting in your pantry! It just takes a few ingredients to turn it into delicious pumpkin pancakes for everyone to enjoy. You may be wondering why this recipe doesn't include eggs which is a staple in pancake making. That's because the pumpkin puree replaces the egg. Otherwise it would be too mushy!
Ingredients
- 1 cup Pancake Mix
- 1 cup Pumpkin puree not pumpkin pie filling!
- 1 tsp Pumpkin Pie Spice
- 1/4 cup Milk
- 1 tsp Vanilla
Instructions
- Heat your griddle or non stick pan on medium heat. Spray well with non stick spray or butter.
- In a mixing bowl, combine all the ingredients and whisk together until fully combined. Let the batter sit for 2-3 minutes to fluff up.
- Using a 1/4 cup, scoop out batter and place onto your pan. Cook for about 1 minute per side or until you start to see some bubbles. Flip and cook the other side.
- Serve with maple syrup and cinnamon sugar
