Red Pesto Mozzarella Stuffed Meatballs
These meatballs have a fun cheesy surprise in the center! I love making meatballs because they are so quick, easy and delicious. Meatballs are also great for meal prep so you can easily add these into your rotation! You can add these into your favorite pasta or if you're like me you eat them with rice and veggies. They are tender, juicy and delicious! This entire recipe comes together in about 35 minutes including the cooking time. Red pesto is usually made from sundried tomatoes. You can find it right next to the classic pesto. I used a fun one from Trader Joe's which was made with cashews and it worked lovely!
Ingredients
- 1 lb 93% lean ground beef
- 1/4 cup Breadcrumbs classic or italian
- 1 Egg, whisked
- 2-3 Low Fat Mozzarella Sticks
- 1/4 White Onion, Finely Chopped
- 3 Garlic, Minced
- 1 tsp Italian Seasoning
- 1/2 tsp Salt
- 1/4 cup Sundried Tomato Pesto
- Marinara Sauce(or your favorite spaghetti sauce) optional but I like to top them with some sauce
Instructions
- In a large mixing bowl, add your beef, breadcrumbs, egg, onion, garlic, Italian seasoning, Salt and Pesto. Mix together until well combined.
- Cut your mozzarella sticks into 1" pieces.
- I like to use a tbsp to scoop the meat but you can make whatever size you like(just be conscious of the cooking time if you go jumbo or teeny!). Scoop out some of the beef, shape into a meatball and make a little dent in the center. Add your piece of mozzarella stick. Cover with a little more beef. Shape until round.
- Spray your baking sheet well with non stick spray. Bake at 400F for 20 minutes being sure to flip the meatballs over halfway through.
- Top meatballs with some of your favorite red pasta sauce and enjoy!
