Slow Cooker Ropa Vieja (Cuban Shredded Beef)
Ropa Vieja is a traditional Cuban recipe consisting of shredded beef and vegetables cooked in a tomato based stew. This is one of my most popular recipes and it’s made with love (and patience!)
Slow Cooker Ropa Vieja (Cuban Shredded Beef)
Here is another Latin recipe where some of you may be asking what on earth is "ropa vieja"? This is another traditional Cuban and Latin Caribbean beef recipe which quite literally translates to "old clothes" since it looks like a pile of clothes once its done cooking(or so they say but I dont see it lol). This meal consists of shredded beef and vegetables in a rich tomato based stew.It's a very liquidy(is that a word?!) dish which is absolutely meant to be enjoyed on top of rice to soak up all that goodness. The real recipe calls for a lot more ingredients than I use but in an effort to keep calories down I've altered it. I also skip several steps which absolutely add to the flavor of the dish but I simply never have the time... can you relate? But if you find that you have the time, I would recommend caramelizing the onions and browning the beef!This is a very comforting home cooked meal for Latin Americans and I hope you enjoy it !
Ingredients
- 3 lbs Flank Steak
- 1 Cup Beef Broth
- 6 oz Tomato Paste
- 15 oz Tomato Sauce
- 2.5 tsp Salt (or to taste)
- .5 tsp Black Pepper
- 1.5 tsp Oregano
- 1.5 tsp Cumin
- 2 tsp Paprika
- 3 cloves Minced Garlic
- 1 White Onion
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 1 Bay Leaf
Instructions
- Slice your onion and bell peppers into strips
- (Optional)- On a skillet, heat up olive oil spray to medium high heat and add your white onion strips. Stir and scrape up any brown bits for about 8-10 minutes until they are golden brown.
- Add entire list of ingredients except the beef to the slow cooker. Make sure to stir everything up well.
- Add your meat to the slow cooker and be sure to position it so sauce gets on top of it as well. Set slow cooker to low for 8 hours.
- Once it's done, Take only the meat out to shred it up.
- Place shredded beef back into the slow cooker and mix it up well with the sauce. Serve with rice and enjoy!
