Tajin Pineapple Chicken Kabobs
These kabobs are tangy, savory and sweet all at once. A flavor explosion and a healthy meal done in under 15 minutes!
Tajin Chicken & Pineapple Kabobs
These kabobs are zesty, sweet and savory all at once! They are super fun for outdoor grilling. I also love giving people new ideas for Tajin. It's truly such a versatile spice and there are so many different ways you can use. Who doesn't like Tajin?! If you dont have access to a grill, you can make these on a cast iron pan over your stovetop!
Ingredients
- 1-2 lb Chicken, breast or thighs, cut into 1.5" chunks i love thighs for this!
- 1 cup pineapple chunks
- .5 Onion, red or white, cut into 1" chunks
- 1-2 tbsp Tajin, to your liking
- 1 tsp Cumin
- 1 tsp Salt
- 1 tsp Paprika
- 1 Lime, Juiced
- 2 Garlic Cloves, minced
- 1 tbsp Olive oil
Instructions
- In a large mixing bowl, add your chicken chunks, pineapple, onion, cumin, salt, paprika, lime juice, garlic and olive oil. Toss together until well combined
- Thread your chicken onto your skewers making sure to alternate with the pineapple and onion. Don't crowd the skewer!
- Season your skewers with tajin, being sure to flip them over as well. Some of the tajin will fall off so don't be afraid to put a little extra on.
- Preheat your grill to medium high heat. Be sure to either spray with non stick, brush with oil or use a foil grill cover.
- Grill until cooked through which could take anywhere from 6-8 minutes per side. I like to use a thermometer to check.
- Serve and enjoy!
