Tomato Basil Rice
This flavorful rice comes together in 30 minutes and is so delicious! This is such a fun way to mix up your traditional white rice and try something with more flavor. While it is Italian flavors, this pairs well with most things!
Ingredients
- 1 cup Long grain white rice Rinsed until water is clear
- .5 Sweet Onion, Diced
- 2 Garlic Cloves, Minced
- 1.5 tbsp Tomato Paste
- 1 Roma Tomato, Deseeded and Diced
- 1 tsp Dried Basil
- Salt, to taste
- 2 cups Chicken Broth
Instructions
- Over medium heat, saute your onions for about 7-8 minutes or until translucent and light brown.
- Add your tomato paste and garlic and combine well. Saute for another 4-5 minutes until fragrant.
- Add diced tomatoes, basil and salt. Combine well and saute for a couple of minutes.
- Add your uncooked cup of rice and mix until well combined. Saute for a couple of minutes.
- Add your chicken broth and bring to a boil. Lower the temperature down to simmer, cover with a lid and let it cook for 25 minutes. Fluff with a fork.
