Traditional Quick & Healthy Shakshuka
Shakshuka is a traditional Middle Eastern breakfast made from a delicious combination of tomatoes, onion, red bell peppers and spices. Eggs are baked on top and it's best eaten with a big hunk of bread to dip in that delicious tomato sauce. Shakshuka can be enjoyed at any point of the day which I think is so fun. Its quick, healthy and delicious! You're going to love the aroma in your kitchen too!
Ingredients
- 6 Eggs
- 1 Yellow Onion, Sliced into strips
- 1 Red Bell Pepper, deseeded and sliced into strips
- 3 Garlic Cloves, Minced
- 1 tsp Paprika
- 1 tsp Cumin
- 1 28-ounce can of whole peeled tomato
- 1 tsp Salt
- 1/4 tsp Cayenne optional if you want it spicy
- Fresh Cilantro, garnish
- Bread for dipping I like big chunks of sourdough
Instructions
- Preheat oven to 375 degrees.
- Heat 2 tbs of olive oil on a large skillet over medium heat. Make sure the skillet you use is oven proof. Add the onion and bell pepper and cook until soft, about 15 minutes. Make sure to stir them ocassionally.
- Add garlic, paprika, cumin and salt and cook until fragrant, about 2 minutes.
- Pour in the tomatoes with the juice. Break down the tomatoes a bit with a wooden spoon. Bring to a simmer and let it cook for about 8 minutes.
- Gently crack your eggs over the tomatoes. Transfer skillet to oven and cook for about 7 minutes or until the eggs are set.
