Turkey Taco Skillet
This is a fun and delicious alternative to tacos if you're being a little more carb conscious. It also is just fun and you can eat it with tortilla chips if you just want to spice it up! I ended up making this two weeks in a row because it was so delicious I kept craving it! This recipe comes together so quickly in under 20 minutes. Perfect for a busy day! Feel free to add in your own vegetables.. you can't go wrong here! I served these on boats of romaine and it made for a crunchy and delicious meal.
Ingredients
- 1 lb Ground Turkey 92%
- .5 can Black Beans
- .5 cup Corn I like Trader Joes frozen charred corn but you can use any variation
- 1 packet Taco Seasoning I recommend low sodium and natural brands
- 2 tbsp Tomato Paste
- Lime, juiced
- Cilantro garnish
Toppings
- 1 Avocado
- Mexican Shredded Cheese
- Greek Yogurt great sub for sour cream
- Pico De Gallo
- Romaine Boats you can find these pre packaged by the salad. Long pieces of romaine that look like boats
Instructions
- Heat up your skillet to medium heat and spray non stick. Add your ground turkey and saute for about 5 minutes.
- Add your taco seasoning, 1/3 cup of water and the tomato paste. Mix well
- Add beans, corn and lime juice. Mix well and let it saute for about 2 minutes. If your turkey is drying out, add a little bit of water or chicken/beef broth. You want it to maintain moisture always.
- Garnish with avocado, cheese, yogurt, salsa and cilantro
