White Chocolate Stuffed Churro Cookies
These cookies combine the tasty flavor of cinnamon and sugar to create that delicious Churro flavor we all love! Although traditional churros are dipped in a dark chocolate sauce, I wanted to create a bit of a lighter flavor. These are fun to make and everyone will love them!If you're not a big baker, I have incorporated a recipe that uses pre-made sugar cookie mix. If you want to make dough from scratch, I have also listed that option.
Ingredients
Pre-Made Cookie Mix
- 1 bag Sugar Cookie Mix
- 1/2 cup White Chocolate Chunks don't use chips
Churro Seasoning
- 1/3 cup Sugar
- 2 tsp Cinnamon
Made From Scratch
- 1.5 sticks Butter
- 1/2 cup Light Brown Sugar
- 1/2 cup Granulated Sugar
- 1 Egg
- 1 tsp Baking Soda
- 2.5 cups AP Flour
- Pinch of Salt
- 1 tbsp Vanilla
- 1/2 cup White Chocolate Chunks
Easy Icing
- 1 tub Cream Cheese Frosting
- 1-2 tsp Cinnamon, to taste
Instructions
- Preheat oven to 350 degrees
- Follow instructions to make the sugar cookie dough.
- Take a tbsp and measure out a scoop. Roll into a ball and press down a bit to flatten it a little. Place chocolate chunks in the center while making sure not to place any on the edges.
- Grab a little more cookie dough and place it on top of the cookie. You want to press it down so it mixes in together. Press the sides up a bit so they resemble more like a large ball.
- In a small bowl, make your Churro Seasoning by combining the cinnamon and sugar
- Dip each of your dough balls into the seasoning. Be sure to coat balls all around. Place on non stick baking sheet.
- Bake for 10 minutes
- While your cookies are baking, make your icing. Take half of the cream cheese frosting and put it into a bowl. Microwave for 15-30 seconds until partially melted. You dont it to be complete liquid.
- Mix in cinnamon and combine well. Pour icing into a Ziploc bag and close. Cut the corner a tiny bit. Once your cookies have cooled down for 10 minutes, you can start icing them. Drizzle icing over each cookie.
Made From Scratch
- Preheat oven to 350
- In a bowl, combine flour, baking soda and salt. Set aside.
- In a large mixing bowl, combine your butter, brown sugar and granulated sugar. Mix together until well combined. Add the egg and vanilla. Mix well.
- Mix your dry ingredients into your wet ingredients and mix until combined. Don't over mix!
- Scoop out 1 tbsp of dough and roll into a ball and place on your baking sheet. Press down the center of the ball to create a little dent and Take your white chocolate chunks and place in the center.
- Grab a little more dough to cover the top. Make sure to seal the edges together.
- In a small bowl, make your Churro Seasoning by combining the sugar and cinnamon.
