Chocolate Loaf Cake

This chocolate loaf cake is extra decadent with a simple ganache frosting! I was craving the Starbucks loaf cake consistency but I wanted something a little richer and this was perfect! It's super easy to make and takes no special technique. You just mix and bake! It's not too crumbly so it can hold its own but still extra moist and delicious.

Servings 1 loaf

Ingredients
  

  • 2 Eggs
  • 1 cup Sour Cream
  • 1 cup Cake Flour
  • 1/2 cup Unsweetened Cocoa Powder
  • 2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 cup Sugar
  • .5 tsp Espresso or Coffee Grinds optional but worth it
  • 1.5 sticks Butter
  • 1 tbsp Vanilla
  • 2 cups Semi Sweet Chocolate Chips
  • 1/2 cup Heavy Cream

Instructions
 

  • Preheat oven to 350 degrees. Spray your loaf pan with non stick spray.
  • In a large mixing bowl, add together your dry ingredients: flour, cocoa powder, baking powder, salt, sugar, coffee powder. Mix together until well combined.
  • In your mixer, add your wet ingredients. Eggs, sour cream, butter and vanilla. Cream together.
  • Add your dry ingredients into your wet little by little. Mix until well combined, being sure to not over mix.
  • Add your chocolate chips and stir together well.
  • Bake for 35-40 minutes, using the toothpick method to determine when its done.

Ganache

  • Make your ganache by combining one cup of chocolate chips and 1/2 cup of heavy cream into a microwave safe bowl. Microwave for 30 seconds and stir really well. If it seems like it needs a little more heat, put it in for another 15 or 30 seconds. Do not over heat or it will be ruined.
  • Let your cake cool down completely before frosting it.
