Quick Parmesan Pumpkin Bolognese

Please make this. If you are looking for one thing to make on my website.. please make this. It's SO GOOD. It's cozy, warm, delicious. Sit by a fireplace and have the feels type of meal.
I came up with this when I had no time to cook. I got home and it was like 8 pm so I needed something quick and VOILA! It's easy, delicious and lean. Since I was so time constrained, my creativity stopped here but there are so many add ins you can consider. You can add some greens into this recipe to help boost nutrition. Spinach or kale would work nicely. You can add some squash which would complement the paste nicely. Have fun with it!
For your meat, as always I recommend a lean beef of atleast 90%. I used turkey for this one and it was perfect!

Ingredients
  

  • 1 lb 90% lean ground beef or turkey
  • .5 can Pumpkin Puree
  • .5 can Tomato Paste so it should be 4 oz
  • 1 tsp Oregano
  • .5 tsp Onion Powder
  • 2 Garlic cloves, minced
  • 1/8 tsp Pumpkin Pie Spice
  • 7 oz Canned Tomatoes
  • 2 tbsps Low Fat Cream or Milk
  • .5 cup Parmesan Cheese for garnish

Instructions
 

  • Over medium heat, add 1 tbsp of olive oil or spray to your pan and add your ground beef. Make sure to ground it up as much as you can.
  • Add tomato paste and pumpkin puree and combine well.
  • Add your oregano, onion powder, garlic cloves and pumpkin pie spice. Mix well.
  • Add canned tomatoes. Lightly break up the tomatoes to break them apart but not squash them entirely. We want there to be pieces of delicious tomato!
  • Bring to a simmer for 5 minutes
  • Add your splash of cream and parmesan cheese. Combine well. Let it melt and simmer for a few minutes.
  • Garnish with more parmesan cheese!
