Low Fat Creamy Mushroom Turkey Meatballs
These meatballs are low fat, easy to make AND delicious. It doesn’t really get better than that folks. The creamy mushroom sauce is so comforting. Yum!
Low Fat Creamy Mushroom Turkey Meatballs
Traditional delicious creamy mushroom sauce recipes are usually extremely high in fat. They contain large amounts butter and cream which both add up to an average of about 25 grams of fat per cup. Yikes! My recipe trims down all that fat by limiting the dairy and overloading on the spices and vegetables used to create a delicious sauce. It's quite easy to make and a great recipe to keep on your rotation. I hope you like them!
Ingredients
- 1 lb Ground Turkey 93%
- 1/4 White Onion, Diced into very small cubes
- 1/4 cup Fresh Parsley
- 3 Garlic Cloves, Minced
- 1 Egg
- 1/4 cup Fresh Shredded Parmesan Cheese
- Salt And Pepper To Taste i did 1/2 tsp of salt and a sprinkle of pepper but I dont like my food salty
Mushroom Sauce
- 16 oz Mushrooms, Sliced Any mushrooms works. I like a combination but Portobello and Cremini are both good options
- 2 cups Chicken Stock
- 2 tbs Worcestershire Sauce
- .5 tsp Garlic Powder
- .5 tsp Onion Powder
- 1/2 cup Reduced Fat Milk If you are dairy free, almond milk works
- Freshly Shredded Parmesan Cheese For Garnish
Instructions
- In a large mixing bowl, add your turkey, onion, parsley, garlic, egg, salt and pepper
- Combine all ingredients until well mixed.
- Using a spoon, scoop out turkey and form into meatballs pressing in between your hands and rolling. You can do whatever size you like. I personally like a medium size.
- Over medium high heat, add a pan with non stick spray. Once it's warm, add your meatballs in batches. Be sure not to crowd the pan.
- You want to brown all sides of the meatballs so be sure to flip them after a couple of minutes on all sides. They should cook for about 7 minutes total. Once they are brown on all sides, remove from pan.
Sauce
- While your meatballs are cooking, heat up a large pan over medium heat with non stick spray.
- Once its hot, add your mushrooms. Stir fry them until soft about 5-7 minutes.
- Add in your stock, Worcestershire sauce, garlic powder, onion powder and milk. Reduce heat to low and mix well.
- Add your turkey meatballs to the sauce and combine well. Cover and let the sauce lightly simmer for 15 minutes.
