Mozzarella and Spinach Breakfast Pizza
This breakfast pizza is easy to make and a fun switch up to your normal meal. Packed with protein from the eggs and nutrients from the spinach this is a great way to start the day!
Mozzarella and Spinach Breakfast Pizza
This breakfast pizza comes together so quickly! It's such a fun treat to make on the weekends.
Ingredients
- 1 ball Pizza Dough Trader Joes sells this pre-made
- .5 Orange Bell Pepper
- 2 cups Baby Spinach
- 2 Garlic cloves, minced
- 4 oz Buffalo Mozzarella Slices
- .5 cup Shredded Parmesan
- 4 Eggs
- 1 cup Pizza Sauce
Instructions
- Preheat oven to 350 degrees.
- Dust the surface of the dough with flour. Pick the dough up in both hands and stretch and turn it. Stretch out your pizza dough onto a round pizza pan or baking sheet. The thinner the better in my opinion as it will yield a crunchy finish !
- Add your sauce to the pizza dough leaving it about 1" from the edge
- Bake in oven for 5 minutes
- Meanwhile, saute your bell peppers over medium heat until softened, about 7 minutes.
- Add garlic and spinach and saute until the spinach is completely wilted.
- Once your pizza is done cooking, remove from the oven. Spread your bell pepper and spinach mixture evenly
- Add mozzarella slices
- Sprinkle parmesan in the areas between the mozzarella
- Using a spoon, create 4 little dents for the eggs. Crack the egg into each little well.
- Bake for 8-10 minutes depending on how you like your eggs cooked.
