Slow Cooker Low Sugar Hawaiian Chicken

Slow Cooker Low Sugar Hawaiian Chicken

This sweet and savory chicken is super delicious! This is one of those recipes that anyone will like (including those kiddos). It's so easy to make...truly it takes no brain cells to put this one together!
There are a bunch of Hawaiian chicken recipes out there but they incorporate so much added sugar. This recipe won't knock you off your diet goals with its low sugar and high protein ingredients. Enjoy!
Note on thickening agents: You may be wondering what Arrowroot powder is. Arrowroot is similar to cornstarch. What is cornstarch? It's a thickening agent. You use this when you want to, for example, thicken up a stew and not have it be so liquidy. It's a wonderful tool to get that perfect texture that you may be looking for. The difference between cornstarch and arrowroot is that arrowroot is generally less processed than cornstarch which is why I tend to promote that one more. There are other benefits such as the taste and overall look but my main concern is really those added chemicals.

Ingredients
  

  • 16-20 oz Fresh Pineapple Chunks do not used canned!
  • 2 lbs Chicken Breast
  • 1/2 Sweet Onion, Cut Into Chunks
  • 1 Red Bell Pepper, Cut Into Chunks

Sauce

  • 1/4 cup Low Sodium Soy Sauce
  • 1/4 cup Rice Vinegar
  • 1/4 cup Sugar Free BBQ Sauce I like G Hughes
  • 1 tbsp Freshly Grated Ginger
  • 2 Garlic Cloves, Minced
  • 1 tbsp Arrowroot powder mixed with 2 tbsp of COLD water you can use corn starch as well

Instructions
 

  • In a small bowl, combine together your sauce ingredients. Add in everything except the corn starch. Whisk together until well combined.
  • In your slow cooker, add in your chicken, bell pepper, onions and pineapple. Add in your sauce and combine everything well.
  • Set on high for 3 hours. When it has 30 minutes left, add in your arrowroot/cornstarch slurry. Mix well and let it finish cooking.
  • I recommend serving over white rice. Enjoy!
