Arrowroot is similar to cornstarch. What is cornstarch? It's a thickening agent. You use this when you want to, for example, thicken up a stew and not have it be so liquidy. It's a wonderful tool to get that perfect texture that you may be looking for. The difference between cornstarch and arrowroot is that arrowroot is generally less processed than cornstarch which is why I tend to promote that one more. There are other benefits such as the taste and overall look but my main concern is really those added chemicals.
