Spiced Caramel Pumpkin Blondies

A delicious Fall treat that is so easy to make and a great addition to a holiday gathering! These are the perfect level of richness–not too sweet but just right.

Caramel Pumpkin Blondies

These Fall treats are extra delicious thanks to the addition of some creamy caramel nibs. They're easy to make and so delicious!

Ingredients
  

  • 1 cup Butter, Melted i use unsalted
  • 1.5 cups Packed Brown Sugar
  • .5 cup White Sugar
  • 1 tbsp Pumpkin Pie Spice
  • 2 tsp Vanilla
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 1 egg
  • 1 cup Pumpkin Puree
  • 2.5 cups AP Flour
  • 2 cups Caramel Morsels I used Trader Joes Sea Salt Caramel Morsels but you can use another brand like Nestle

Instructions
 

  • Preheat oven to 350°F. Line a 9×13 pan with parchment paper and coat with nonstick spray. Set aside.
  • In your large mixing bowl, add your melted butter and sugar. Stir together. Add egg, vanilla, pumpkin pie spice, salt, pumpkin puree and baking powder and combine.
  • Add in your flour little by little until incorporated.
  • Stir in your caramel morsels and fold in.
  • Spread the batter evenly into the pan. Bake for 30-35 minutes, using the toothpick method to make sure its done.
  • When they are done, it may puff up and look like a cake. This is normal. They MUST cool for 15 minutes and then they will resemble blondies.
