Summer Mint & Basil Pesto
Pesto is absolutely one of my favorite ingredients to cook with. It just reminds me of vacation so much and really makes me so happy to eat it. I feel transported to Italy every time!I wanted to create something that felt lighter for summer. Something that could be delicious on a cold pasta salad but also a big warm bowl. Something zesty and refreshing. Enter... mint! The combination of the basil and mint with some lemon zest was the perfect trio. You're going to love this.
Equipment
- 1 food processor
Ingredients
- 1 cup Fresh Basil Leaves
- 1 cup Fresh Mint Leaves
- 1/3 cup Pine nuts
- 2 Garlic Cloves
- 1/4 tsp Salt
- 1/3 cup Olive Oiil
- 1 tbsp Lemon Juice
- .5 Lemon, zest only zest half a lemon
Instructions
- Add your basil, mint, pine nuts, garlic, salt, lemon zest and lemon juice to the food processor. Give it a few several pulses until everything is well chopped up.
- Preferably with the food processor running, Slowly add your olive oil and continue to pulse until well combined. You can add more olive oil until you reach your desired consistency.
