Pesto is absolutely one of my favorite ingredients to cook with. It just reminds me of vacation so much and really makes me so happy to eat it. I feel transported to Italy every time!I wanted to create something that felt lighter for summer. Something that could be delicious on a cold pasta salad but also a big warm bowl. Something zesty and refreshing. Enter... mint! The combination of the basil and mint with some lemon zest was the perfect trio. You're going to love this.
Add your basil, mint, pine nuts, garlic, salt, lemon zest and lemon juice to the food processor. Give it a few several pulses until everything is well chopped up.
Preferably with the food processor running, Slowly add your olive oil and continue to pulse until well combined. You can add more olive oil until you reach your desired consistency.
