Summer Turkey Chili

Chili? During the summer? Yes honey! This chili is bean-free to keep it light and loaded with vegetables to pack it with those vitamins. So delicious!

Summer Turkey Chili

Chili? In the summer? YES! Why not? This version is loaded with veggies and skips the beans to give it a lighter feel. Not to mention my secret weapon(Chipotle adobo sauce) gives it the must unique and delicious flavor.
Like many of my recipes, feel free to substitute or add in whatever you want! It's chili. And its a slow cooker. You can't mess this up girl.
Toppings: Definitely top with some Greek yogurt and avocado because that is delicious.
Cooking: I include a slow cooker method and a stove top method. For the slow cooker, I prefer 4 hours on high heat so the meat doesn't get too finely ground but have done it 8 hours on low heat and it works just fine as well. Your meat will just be a little more ground.

Ingredients
  

  • 1 lb Ground Turkey the one with 10g of fat. NOT breast.
  • .5 White Onion
  • 14.5 oz Can of Diced Tomatoes
  • 15 oz Can Tomato Sauce
  • 2 Garlic Cloves, Minced
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 2 tbs Sauce from canned Chipotle Peppers in Adobo Sauce
  • 1 Carrot, diced
  • 1 Yellow Squash, diced
  • 1 Red Bell Pepper, Diced
  • 1 cup Chicken Broth
  • 1 tsp Salt
  • 2 cups Spinach

Instructions
 

Slow Cooker

  • Add your turkey, tomato sauce, diced tomatoes, red bell pepper, onion, cumin, onion powder, garlic cloves, salt, chicken broth and chipotle sauce to your slow cooker.
  • Cook on either high for 4 hours or low for 8 hours. Set a timer for 1 hour prior to it being done and add in the squash and carrots.
  • Once it's done cooking, add in the spinach and stir it in well.

Stove Top

  • In a large stock pot, add your turkey and onions and sauté until your turkey is no longer pink. Be sure to finely ground the meat.
  • Add in your tomato sauce, diced tomatoes, red bell pepper, onion, salt, cumin, onion powder, garlic cloves, chicken broth, squash, carrots and chipotle sauce.
  • Bring mixture to a boil. Once it's boiling, reduce your heat down to simmer, cover and let it cook for 30 minutes. Stir it twice during the cooking process to make sure everything is mixing well.
  • Once it's ready to serve, add in your spinach and stir well.
