Bistic de palomilla is a Cuban dish consisting of very thin cut sirloin meat pan seared in a flavorful marinade. A traditional dish is cooked with a lot of onions, mojo marinade and a whole lot of oil. This version is made with seared tomatoes to give it a lighter feel.The best thing about cooking a palomilla steak is that each side only takes 3 minutes since it's so thin! This meal is great if you are low on time or energy but want something yummy :)
Add your steaks, mustard, Worcestershire and garlic to a bowl. Mix well and let it marinade for 30 minutes.
Make sure to let your steaks come to room temperature before cooking.
Add plenty of non stick spray to your pan on medium high heat. Add your steak (do not crowd the pan) and let it sear for 3 minutes. Do not touch the steak! Don't flip it, don't move it, leave it alone. Flip and cook another 3 minutes. Remove from the pan and put it in a foil tent until ready to serve.
In the same pan, add sliced tomato until they get nice and soft. Serve on top of steaks.
