Using a sharp knife, cut strips into the top of your chicken vertically, making sure to not pierce all the way but moreso halfway. Then do the same but horizontally so that they cut through each other and form 1' squares of chicken. Almost gridlike. Brush with your neutral oil on both sides and Season with salt.
In a small mixing bowl, add your miso, soy, honey and peanut butter. Whisk until well combined. Do a taste test to make sure it's saltiness and sweetness is to your liking. If you want more salt, add more soy, If you want more sweet, add more honey. Set aside about half the sauce.
Using a brush or a spoon, spread the sauce over the top of the chicken, making sure that it pours in between the cracks.
Preheat air fryer to 375 f degrees. Cook chicken for 6-8 minutes per side, being sure to check if the internal temp is cooked.
Remove from air fryer and spread the reserved sauce over the chicken. Serve over jasmine rice.
