Start by making the chipotle marinade. Put all ingredients into a small bowl and mix well. Brush your wings well with this sauce.
Bake on a wired baking sheet at 425 for 20 minutes.
After 20 minutes, flip your wings and bake for another 25 minutes.
While those are cooking, let's make the mango sauce. Cut up your mango and put it in a blender to puree. If you are using the frozen mango pulp, make sure to fully defrost it. Add garlic, paprika, lemon juice and apple cider vinegar. Blend/Mix well. (Best if you use a blender but you can mix by hand if you do not have one)
Once you are done mixing, add your mango sauce to a sauce pan at medium heat. Add in your 2 tbs of honey agave or maple syrup and bring to a simmer. Stir it occasionally for 5-10 minutes.
Dip your chicken wings into the mango sauce and coat well.
Return wings to the oven and cook for another 10 minutes.
Feel free to use the leftover mango sauce as a dipping sauce for some extra mango flavor!
