Banana Cinnamon Coffee Cake
What do banana bread, cinnamon streusel and coffee cake all have in common? They are all absolutely delicious. So why not combine all three?! This coffee cake is highly addicting so get ready! It's the perfect amount of moisture thanks to the banana. It will literally be delicious for days.
Ingredients
- 2 cups Flour
- 3 tsp Baking Powder
- 1 tsp Cinnamon
- 1 tsp Vanilla
- .5 tsp Salt
- 3 Bananas, mashed
- .5 cup Unsalted butter, room temp
- 1 cup Sugar
- .5 cup Brown Sugar
- 2 eggs
- 1 cup Buttermilk
- Parchment Paper i know this isnt an ingredient but trust me you need this!
Crumb Streusel Topping
- .5 cup Unsalted Butter, cut into cubes, make sure its cold
- 1 cup Flour
- 1 cup Brown Sugar
- .5 cup Sugar
- 1 tsp Cinnamon
Instructions
- In a large bowl, whisk together flour, baking powder, cinnamon and salt. Set aside.
- In your mixer, add the butter and sugar and cream together until well-combined
- Add eggs, vanilla and mashed bananas. Combine well.
- Add in half of the dry mixture and half the buttermilk. Mix well.
- Add the other half and rest of buttermilk. Mix well.
- Grease a 9x13 pan and cover it in parchment paper. Pour cake batter into pan. Set aside.
- Streusel: In a large bowl, add the cold butter cubes, flour, sugars and cinnamon. Use your hands and combine well. Mush together well until it resembles a crumb mixture.
- Add streusel to the top of the cake batter
- Bake at 350 degrees for 50-60 minutes making sure a toothpick comes out clean
