Chicken Ranch Bowls

Ranch dressing is one of those things that you either love or hate. I personally love it on thin crust pizza (which might be a Miami thing I'm not completely sure but 10/10 recommend trying that) and I also think its good on breaded chicken.
I came across this packet of 5 ingredient ranch seasoning which caught my eye. I am a sucker for simple things so I was brainstorming what to make with it and I thought let's try some chicken! Cooking chicken in a yogurt marinade creates a beautiful and juicy result. I combined the two and decided this was the perfect chicken for a meal prep bowl.
The key here is to reserve half of the yogurt as a topping. You will definitely need it!

Ingredients
  

  • 1.5 lbs Chicken Breast
  • 1 cup Low Fat Plain Greek Yogurt
  • 1 Packet of McCormick Just 5 Ingredient Ranch Seasoning
  • .5 Lemon, juiced

Instructions
 

  • Mix together the yogurt, packet of seasoning and lemon juice. Add half of it to a Ziploc bag. Set the other half aside.
  • Add your chicken to the bag, seal and shake. Let it marinade for atleast 30 minutes and as long as overnight.
  • Over medium high heat, add some olive oil or non stick spray to your pan. Add your chicken and cook for about 6-8 minutes per side, checking for doneness.
  • To make a meal prep bowl, I recommend serving it with your favorite flavor of rice(I used yellow), tomatoes, cucumbers, carrots and the remainder of the dressing. It should yield 4 bowls.
