Easy Mediterranean Pasta Salad

Every BBQ, pool party or gathering calls for a really good pasta salad. This one comes together so quickly and requires basically no skill at all. Just follow directions and you'll end up with a tasty, light and delicious pasta salad! The basil gives it the ultimate taste of summer. If you are looking for a way to incorporate protein, I would recommend using a chickpea pasta!

Ingredients
  

  • 3 cups Fusilli Pasta I use Banza to get that extra protein
  • 1 Package of cherry tomatoes, halved
  • 2 cups Baby Spinach
  • 1 cup Crumbled Feta Cheese
  • 1 cup Basil Leaves, chopped
  • 1 Green Bell Pepper, chopped

Dressing

  • 1/3 cup Extra Virgin Olive Oil
  • 3 tbs Lemon Juice
  • 2 tsp Dijon Mustard
  • 4 Garlic Cloves, Minced
  • 1.5 tsp Italian Seasoning
  • 1 tsp Salt

Instructions
 

  • Cook your pasta according to package instructions
  • While your pasta is cooking, make the dressing. In a small bowl, combine all the dressing ingredients and whisk until well combined.
  • Drain the pasta and leave behind a little bit of pasta water to mix it in. Otherwise, the pasta is going to get sticky. Let it cool down before adding any ingredients.
  • Transfer to a large bowl and add in all your ingredients. Pour the dressing over and mix well.
