Easy Strawberry & Dulce De Leche Pavlova

This Strawberry and Dulce de Leche Pavlova features a crisp, cloud-like meringue shell with a soft, marshmallowy center, topped with swirls of rich dulce de leche, billows of whipped cream, and fresh, juicy strawberries. A perfect balance of sweetness, texture, and freshness in every bite.

Ingredients
  

  • 4 Egg Whites Must be from a cracked egg; don't use store bought egg whites
  • 1 cup Sugar
  • 1 tsp Vanilla
  • .5 tsp Cream of tartar
  • 1 tsp Cornstarch
  • 1 tsp Lemon juice

Toppings

  • 13.4 can dulce de leche I like La Lechera
  • 1 cup thinly sliced strawberries
  • Whipped Cream

Instructions
 

  • Preheat the oven to 350°F. Line a large baking sheet with parchment paper
  • Using a mixer with a whisk, beat the egg whites on medium-high speed until soft peaks form, about 5 minutes. 
  • Gradually add the sugar, making sure to keep beating. Once all of the sugar has been added, turn the mixer up to high speed and continue beating until glossy stiff peaks form, about 2 minutes. The peaks should be stiff enough that you can hold the whisk upright and the peaks won’t move. Add the vanilla extract and beat for 1 more minute. The peaks should still be very stiff. If not, keep on mixing on high speed and they should get there.
  • Using a spatula, gently fold in the cream of tartar, cornstarch and lemon juice
  • Spread a 1/4-inch-thick layer of meringue onto the baking sheet into a circle shaped about 8 inches. Using your spoon, form a taller edge around the circle to create a dip in the center and use the back of the spoon to make decorative swirls
  • Place pavlova in the oven. As soon as you close the oven door, reduce heat to 200°F. The pavlova will stay in the oven as it cools down to 200°F. Bake until the pavlova is firm and dry, about 90 minutes total. It should come out feeling completely light and dry. if it feels heavy, its not done.
  • Once the 90 minutes pass, turn off the oven and let it sit in there for another 30-60 minutes.
  • Once its cooled down, top with dulce de leche and then your strawberries, finishing with delicious whipped cream.
