Who doesn't love PF Chang's chicken lettuce wraps? They are so juice and delicious it's impossible to not love them! You know what I don't love though? The fact that according to their website, the calories in one order of chicken lettuce wraps tops out at 710 calories. Wowzzaaa. It doesn't end there folks. 27 grams of fat, 1830 mg of sodium, 77 grams of carbs and 38 grams of sugar(that's more sugar than a Snickers bar for reference). WOW that is a lot of information to take in folks. You thought you were eating a carb friendly option by going with lettuce wraps huh? Guess not.Let's recreate these bad boys and make them much healthier. Let's get cookin! This requires a lot of veggies to be chopped up so if you want to save time you can chop them in the morning or feel free to buy pre-chopped.

1/3cupCarrot, diced
1/3cupCelery, diced
1/3cupRed Bell Pepper, diced
1/3cup Red Onion, Diced
1/3cupShitake Mushrooms, Diced
1/3cupWater Chestnuts, Diced
1Head of lettuce
Salt and Pepper to taste
3Green Onions, Sliced For Garnish
Sauce
3tbsSoy, Tamari or Coconut Aminos
3tbsRice Vinegar
1tbs Ground Ginger
3Garlic Cloves, Minced
1tbsHoison Sauce
1/2tspSesame oil
1tspOptional: Gochuchang (If you want it spicy)
Instructions
Make your sauce
In a small bowl, combine soy sauce, rice vinegar, ground ginger, garlic, hoison sauce and sesame oil. (optional gochuchang for spice). Whisk well and set aside.
Lettuce wraps
Set your non stick skillet on medium-high over the stove and add a little bit of olive oil. Add in your chopped carrot, celery, red bell pepper, red onion and mushrooms. Sauté until onions are translucent and the size of the veggies has shrunk about 7-10 minutes.
Remove from the pan. Add in your ground chicken and cook through about 7-10 minutes. Make sure it does not dry out. If your pan is getting dry, add a little chicken stock or water as you go.
Add your cooked vegetables to the pan and stir well. Add in your water chestnuts.
Turn down your heat to low and add in your sauce. Bring it to a simmer and make sure to evenly coat the mixture with the sauce.
Serve mixture in lettuce leaves and garnish with green onion.
