Let's start by preparing the shrimp! Get three small plates out and a small baking tray. Add your flour on one plate, whisked eggs on another and breadcrumbs on the third.
Dip your shrimp into the flour first, making sure to coat it well.
Then add it into the egg wash and lastly into the breadcrumbs. Make sure to coat it well! Press the crumbs into it.
Set your shrimp on the baking tray as you go.
Once you are done, lets preheat your air fryer. Spray the inside basket with non stick spray. Preheat to 390 degrees for 5 minutes.
Once its done, add your shrimp in batches. Do not over crowd. Cook for 9 minutes, flipping over halfway.
While your shrimp are cooking, make your dressing in a small bowl. Whisk together all the ingredients until well combined.
Once your shrimp are done, toss with the sauce and serve.
