Preheat oven to 375
Dice your onion. Spray skillet with non stick and add your onion. Saute on medium high heat until they reach a caramel translucent color. About 15-20 min. Let them cool down a bit.
In a large mixing bowl, add your ground turkey and mix it up to break down the ground meat. I prefer to use my hands for this process so I recommend wearing gloves. If not, you can just use a spatula to mix.
Whisk your two eggs and add to turkey mixture along with all the rest of the ingredients. Mix mix mix!
Once your onions have cooled down a little, add them to turkey mixture and mix well
Get your loaf pan and spray it with non stick.. Add turkey mixture and spread it nice and even.
Bake at 375 for 50-60 minutes- until it reaches a nice brown color. (It wont be dark brown because its turkey so dont burn it!)
While your meatloaf is cooking, add a saucepan to your stove on low heat. Add the tomato sauce and diced tomatoes and stir well.
When your meatloaf is done, you may notice some fat has risen to the top. You can just remove that. Slice and serve. Top with sauce and enjoy!
