Y'all already know we love pesto around here. Sometimes I stare into the sky and wonder what else can I add pesto to? And then one day I was like ..omg hummus. So that's how we got here folks! Creamy, delicious, pesto hummus. I brought this on a fun boat day with friends and they devoured it in 5 minutes. You're gonna love it! This would also be so delicious spread onto a turkey sandwich. Or maybe a provolone pesto grilled cheese. Wow ok YUM. Some important things to note...this can take some prep because you have to peel the chickpeas. Make sure you use a good tahini!
1400mlCan of Chickpeas, drainedsave some for garnish
2tbspTahini Paste
1/4cupPestoplus extra for garnish
3tbspLemon Juice
.5tspSalt
2 ice cubes
Pine Nuts for garnish
Instructions
Drain your chickpeas. In a bowl, add warm water and baking soda. Add your chickpeas and let them soak for 10 minutes. Peel off the outer layer skin of the chickpeas and dry well.
Add your chickpeas to a food processor and pulse until they look like crumbs. Add your tahini, pesto, lemon, salt and ice cubes. Pulse until smooth consistency.
Top with pesto, pine nuts and chickpeas for garnish
