Heat oven to 450 degrees
Take your chicken breasts and using a large knife you are going to place your hand over the breast and carefully slice the chicken in half as to butterfly it. Be sure to not cut it all the way and to leave it attached so it's easier to fill and wrap.
Season the outside of the chicken with salt and pepper
In a small mixing bowl, add your goat cheese, oregano and basil. Mix together until well combined.
Open up your butterflied chicken. Using a spoon, spread goat cheese mixture over one side of the inside of the chicken.
Top the goat cheese with sundried tomatoes. I used about 6 pieces.
Close your chicken up. Grab your prosciutto slices and wrap around horizontally. You want to make sure the prosciutto covers the part where you cut the chicken open. It's okay if it doesnt wrap all the way around. You will need to use about 2-3 slices of prosciutto from top to bottom.
This step is important dont skip it!-- On a stovetop pan, heat up 1 tbsp olive oil over medium high heat. You are going to brown your chicken on both sides. About 2-3 minutes per side. Your chicken should have some browning to it and the prosciutto should start to resemble like a lightly cooked piece of sot bacon..
Place your chicken on a baking sheet or dish and bake in the oven for about 18-20 minutes-- I recommend you use a thermometer to check if its done.
