This recipe is one of those "dump it in the slow cooker" and go. You literally cannot mess this up. This meal is perfect for your mid week meal preps since it's so light and healthy and it yields a lot of food! Feel free to add in your favorite veggies! Feel free to swap out breast for chicken thighs. They would come out even better and juicier.
1cupCarrotsI used the pre cut round ones because they're fun
1cupChicken Stock
1White Onion, Sliced
1Lemon, Juiced
1Green Onion, Chopped
3Garlic Cloves, Minced
1tspDried Oregano
1tspDried Thyme
Salt & Pepper to taste
Instructions
Pat dry your chicken breasts and season with oregano, thyme, salt and pepper.
Add all of your ingredients to the slow cooker.
Optional steps: Brown your sliced onions before putting into the slow cooker for a little extra flavor.
Make sure to mix everything well. Cook on low for 4 hours.
DO NOT LET CHICKEN SIT ON WARM SETTING AFTERWARDS. This will dry your chicken out. Be sure to serve with the sauce as this is where all that lemon flavor is.
