This famous Texas dip has gone viral and I had to see what the hype was about! The original recipe, created by Helen Corbitt, only contained black eyed peas, onion, peppers, vinegar and cilantro. It has since evolved in so many ways with everyone putting their own spin on it. I wanted to keep mine simple, healthy and as close to the real thing as possible to get a true feel for it. I simply added avocado and I used the roasted corn kernels from Trader Joe's because sweet roasted corn is such an elevated flavor. Feel free to use whatever corn you want! I also love tomatoes and made this a little heavier on the tomato side. They're so delicious and refreshing you can't go wrong!You can also use whatever dressing you want if you don't feel like mixing your own. I usually recommend making your own due to hidden ingredients, high sugars and calories in pre made salad dressings. If you find a good healthy one, make sure it's vinegar based (not creamy) and it should work well. A light Italian dressing would be nice!Maybe you have your own twist on this dip?
